HUCKLEBERRY CHEESECAKE

CRUST:

1 3/4 c. graham cracker crumbs
1/3 c. butter
1/4 c. sugar


Mix crust and press into 9x13 pan.


CHEESE MIXTURE:

8 oz. cream cheese
1 tsp. vanilla
15 oz. Eagle Brand condensed milk
1/3 c. lemon juice


Beat cheese mixture and spread over crust.

BERRY MIXTURE:


4 c. berries (1 qt. frozen)
1 3/4 c. sugar
6 tbsp. cornstarch
1/2 env. Knox gelatin
2 tbsp. butter


Cook berry mixture until clear and thick. Cool; pour over cheese mixture and chill.

Speaking of which:
Quick, nasty drink (a classic from my younger days)
12 oz. either Schlitz Malt Liquor or Colt .45-Very Cold!
2 shots Gordon's gin
Toss gin in the glass (preferably a large mug) first, tilt it and slowly top off with Schlitz or Colt. Drink rapidly. This beverage is best consumed by people under the age of 25 who don't know any better.

1 muskrat, 1 1/2 tsp. salt, 1/4 tsp. paprika, 1/2 cup flour, 3 tbsp. lard, 3 large onions and 1 cup sour cream.

Soak muskrat overnight in water with 1 tblsp. salt to 1 quart water.
Drain and cut at joints.
Season with 1 tsp. salt and 1/4 tsp. paprika.
Roll in flour and brown in skillet.
Cover muskrat with sliced onions, 1/2 tsp. of salt and sour cream.
Place tight lid on skillet and simmer for an hour.

Works with squirrel and rabbit, too!
